Butternut squash, spinach and Ricotta Lasagne 🍅🍝🧀
Not usually one for a veggie lasagne but I have to say, this worked out very nicely 🎃
I roasted the butternut squash in salt, pepper and fresh thyme.
I mixed wilted spinach, ricotta, a crushed garlic glove, salt, pepper, Parmesan and some nutmeg together.
My tomato sauce was: a tin of chopped toms, a spoonful of tom purée, oregano, onion, garlic, olive oil and some chilli flakes.
All layered in between pasta sheets and topped with béchamel and Parmesan 👌
Bake in the oven for 45 mins 🍂🌝
