You’ve got to pitta pocket or two 🥴🥙

Weekday lunch – Chickpea ‘Tuna’ wholewheat pittas 😍

What it is:

– 1 tin of lightly mashed chickpeas
– Some lemon juice 🍋
– salt and pepper
– A handful of chopped Capers
– Teaspoon of nutritional yeast flakes (if you’re feeling proper vegan about it)
– Mayo (I made my own vegan Mayo but you really can just use good old Helmans)
– 1/2 tin of sweet corn
– 1/2 a chopped avocado

All mixed and put into wholewheat pittas 🥙 🥑

Actually really tasty 😋
